Ingredients
  • 3 Farm Fresh Eggs,separated
  • 1/2 Cup Milk
  • 1/4 Cup Fresh Lemon Juice
  • 2 teaspoons Lemon Peel,grated
  • 1/2 Cup Sugar
  • 1/3 Cup Flour
  • 1/8 teaspoon Salt

Directions
  1. Beat egg yolks in a bowl.
  2. Blend in milk,lemon juice and lemon peel.
  3. Add sugar,flour and salt,beat until smooth.
  4. Beat egg whites until stiff.
  5. Fold into yolk mixture,gently,but completely.
  6. Pour into a greased one quart casserole dish.
  7. Place this dish inside another pan,pour hot water into the the larger pan to about 1" deep.
  8. Bake in a 325 degree oven,for about 30 to 40 minutes,or until golden brown.
  9. Serve warm or cool,topped with whipped cream that has been flavored with Lemon extract.

Made this and was very light and lemony. I had 2nd helping. Has a nice cake on top and developed a lemon custard on the bottom. I had whip cream but no lemon extract for the topping but it was Delicious.
