Ingredients
- 3 Farm Fresh Eggs,separated
- 1/2 Cup Milk
- 1/4 Cup Fresh Lemon Juice
- 2 teaspoons Lemon Peel,grated
- 1/2 Cup Sugar
- 1/3 Cup Flour
- 1/8 teaspoon Salt
Directions
- Beat egg yolks in a bowl.
- Blend in milk,lemon juice and lemon peel.
- Add sugar,flour and salt,beat until smooth.
- Beat egg whites until stiff.
- Fold into yolk mixture,gently,but completely.
- Pour into a greased one quart casserole dish.
- Place this dish inside another pan,pour hot water into the the larger pan to about 1" deep.
- Bake in a 325 degree oven,for about 30 to 40 minutes,or until golden brown.
- Serve warm or cool,topped with whipped cream that has been flavored with Lemon extract.

Made this and was very light and lemony. I had 2nd helping. Has a nice cake on top and developed a lemon custard on the bottom. I had whip cream but no lemon extract for the topping but it was Delicious.
