How to make it

  • 1) Heat the butter in a 10 inch skillet over medium heat. Add the potato and cook until its lightly browned.
  • 2) Add the eggs and bacon. Cook and stir with a fork until the eggs are set but still moist.
  • 3) Spoon about 1/2 of the potato mixture down the center of each tortilla. Top with cheese and Picante Sauce.
  • Fold each tortilla around the filling
  • Easy Substitution Tip: Substitute crumbled cooked pork sausage for the bacon.
  • Makes 4 servings
