From Miss Elizabeth at recipezaar, this is another fruitcake I could possibly eat... no citron! You can even use a quick bread mix with this recipe. Bless you, Elizabeth!

Ingredients
  • BATTER:
  • 4 cups all-purpose flour
  • 1 1/2 cups sugar
  • 3 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup margarine OR butter, softened
  • 1 1/2 cups water
  • 2 large eggs
  • 1 cup cranberries, chopped
  • OR
  • 2 packages quick bread mix
  • 1 cup cranberries, chopped
  • FOLD-INS
  • 2 1/2 cups maraschino cherries, drained well
  • 1 1/2 cups pecans, broken
  • 20 ounces crushed pineapple, drained
  • 2 cups raisins
  • 1 1/2 cups walnuts, broken

Directions
  1. Preheat oven to 350 degrees F.
  2. Grease and lightly flour a tube pan OR line with parchment paper.
  3. In very large bowl mix the batter posted here OR quick bread mixes according to package directions.
  4. Stir in remaining ingredients.
  5. Pour into prepared tube pan.
  6. Baking time varies between 1 1/2 and 2 hours plus.
  7. Cake is done when knife inserted into center comes out dry.
  8. Remove cake from oven.
  9. Cool on wire rack.
  10. Turn out when barely warm.
  11. Slice thin.
  12. Freezes well

Now this sounds like a fruitcake I could love! I don't care for the traditional, I guess not to many people do.This sounds yummy.


Yeah, this is one everyone might like at my house, not just hubby!
