Turkey Enchiladas Recipe

Ingredients
  • 10 6-inch flour tortillas
  • 1 16 oz. can tomatoes, cut up
  • 1 15 oz. can tomato sauce
  • 1 c. finely chopped green pepper
  • 1/2 c. sliced green onions
  • 1/4 c. snipped parsley or cilantro
  • t tsp. chili powder
  • 1/2 tsp. crushed red pepper
  • 1/4 tsp. ground cumin
  • 2 cups chopped cooked turkey
  • 1 3-ounce pkg. cream cheese, softened
  • 1 cup shredded sharp cheddar cheese (4 ounces)

Directions
  1. Lightly grease a low roasting pan
  2. Wrap stack of tortillas tightly in foil.
  3. Heat in a 350 deg. oven for 10 min.
  4. For the sauce, combine undrained tomatoes,
  5. tomato sauce, green pepper, onions, parlsley, chili powder, red pepper and cumin.
  6. Bring to boiling. Reduce heat; simmer uncovered for 5 min.
  7. For turkey mixture, combine half the sauce, turkey, cream cheese
  8. and half the shredded cheese.
  9. Spoon about 1/4 cup turkey mixture onto each tortilla
  10. Roll and place seam side down in prepared pan.
  11. Bake, covered at 350 deg. for 20 minutes.
  12. Pour remaining tomato sauce over tortills; sprinkle with remaining
  13. shredded cheese.
  14. Bake uncovered 8 to 10 minutes more or until sauce is hot.
  15. Serve immediately.

Fantastic rcipe. We eat Turkey all year long in my family, so we do have left overs a lot.
