Ingredients

1 1/2 lb. veal stew pieces, flattened into medallions

2 tbls. butter

2 tbls. olive oil

1 large onion, thinly sliced

1/2 lb. mushrooms, sliced

1 can cream of mushroom soup

2/3 cup Marsala

1 tbls. paprika

Salt and pepper to taste

1 tsp. thyme

Directions

In large saute pan, heat oil and butter to medium heat

Add veal and stir constantly until meat is seared

Remove to bowl and set aside

In same pan, saute onion until tender

Add mushrooms and cook until liquid has evaporated

In mixing bowl, combine soup, Marsala, paprika, salt, pepper and thyme and stir until smooth

Add veal back to pan with onions

Pour sauce over and stir until mixed evenly

Bring to simmer

Cover pan loosely and turn heat down to as low as possible to bubble gently

Let cook for an hour, stirring occasionally

Great served with noodles
