Ingredients

1/2-cup Hellmann's mayo

1/2-tspn salt

1/4-cup sugar

1-1/2-lbs carrots processed until fine

1-cup raisins, soaked in apple juice for about 320 minutes before using

Directions

In a medium bow, add mayo, salt and sugar.

Mix together.

Add carrots and raisins and stir together well.

Refrigerate for at least 30 minutes before serving.

This sounds really good. My mother makes a similar carrot salad with pieces of chopped apple and sourcream instead of mayo.
