Breakfast Polenta For One Recipe
I'm looking for good, warming, gluten-free recipes to have while I'm on a gluten elimination diet, so here's hoping!

Ingredients
  • 1 cup water
  • 1/4 cup cornmeal
  • 2 tbsp Thompson raisins
  • 1 tbsp maple syrup

Directions
  1. In a medium saucepan over high heat, bring the water to a boil.
  2. Slowly pour the cornmeal into the hot liquid, wisking constantly.
  3. Lower the heat to cook the mixture at a gentle simmer.
  4. Stir in the raisins and syrup.
  5. Cook, stirring frequently, until the cornmeal is creamy, about 30 minutes.

A little coarser, depending on the grind of polenta you use... but yellow!
