Veggie Cheddar Soup

- 1 med. onion,chopped shopping list
- 1 celery rib,chopped shopping list
- 2 small red potatoes,cut in 1/2" cubes shopping list
- 23/4c water shopping list
- 2tsp reduced-sodium chicken bouillon granules. shopping list
- 1Tbs cornstarch shopping list
- 1/4c cold water shopping list
- 1 can (103/4oz) reduced-fat ,reduced-sodium condensed cream of chicken soup,undiluted shopping list
- 3c frozen California-blend vegetables,thawed shopping list
- 1/2c chopped fully cooked lean ham shopping list
- 8oz. reduced-fat process cheese(Velveeta) ,cubed shopping list
How to make it
- In a large non-stick saucepan coated with cooking spray,cook onion and celery over med. heat till onion is tender. Stir in the potatoes,water and bouillon. Bring to a boil. Reduce heat;cover and simmer 10 mins.
- Combine cornstarch and cold water until smooth;gradually stir into soup. Return to a boil;cook and stir for 1 to 2 mins or till slightly thickened. Stir in condensed soup until blended.
- Reduce heat;add vegetables and ham, Cook and stir until vegetables are tender. Stir in cheese till melted.

We love cheese soup! If we have salmon in the freezer we put that in it and sometime shrimp too! Can't wait for the temps to get somewhat colder so we can have a soup night. 40 is just too warm. Great Post:)
