Lemon Pork Chops Recipe
This is an old recipe that we made often when we used our pressure cookers! Of course you can convert it to an oven dish, cook it for about an hour and obtain the same flavor...today however, getting the same tenderness would be tricky!

Ingredients
  • 4 to 5 Pork Chops
  • 2 tsp. shortening
  • 4 to 5 Lemon slices
  • 1 onion, separated into rings
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 cup ketchup
  • 1 cup water

Directions
  1. Heat pressure cooker, melt shortening and brown chops on both sides.
  2. Top each chop with a lemon slice.
  3. Add onion, salt and pepper.
  4. Combine ketchup and water and pour over chops.
  5. Close cover securely.
  6. Place Pressure Regulator on vent pipe and cook 15 minutes with Pressure Regulator rocking slowly.
  7. Cool cooker at once.
  8. Serve chops with the sauce....goes good with rice.
  9. Or, brown chops, place in a pan, add lemon and all other ingredients, cover and bake in 350 degree oven for 45 min. to one hour. (I'd probably double the sauce and the lemons.)

The days of pressure cookers - what ever happened to them??? This sounds like it has a nice flavor - will try it the old oven method...no pressure cookers around here anymore!


I think the pressure cookers got superseded by the speed of the microwave. Anyway thanks for doing the conversion to a conventional oven for us :)
