Tomato Relish - India style

- 1 T butter shopping list
- 2 teas minced garlic shopping list
- 2 teas ground coriander shopping list
- 1 teas pure chile powder (I use a hot Asian chile powder) shopping list
- 1 teas garam masala shopping list
- 1 teas salt shopping list
- 15 oz can chopped (not petite) tomatoes drained shopping list
- 1 T lemon juice shopping list
- 1/4 c chopped fresh cilantro shopping list
How to make it
- Melt the butter in a pan over medium heat
- Add garlic and the rest of the herbs and spices except cilantro
- Saute for one minute, stirring, careful not to over brown the garlic
- Add the drained tomatoes stirring well
- Simmer for 3-4 minutes.
- Remove from heat and place in a bowl
- Stir in the lemon juice and cilantro.
- Let cool and then cover.
- Will keep for 4-5 days in the refrigerator
- Use on burgers in place of catsup & mustard. Great on a grilled chicken pita along with a dollop of yogurt . Use as a side for chicken, lamb, beef, or pork. We love it just spread on a piece of bread!
