I got this one off another site, last winter. I loved it! It's simple, so easy and has a great flavor. I love that you can serve hot or cold.

Ingredients
- 1 1/2 quart buttermilk
- 1 pint whole milk (CAN USE 2%)
- 2 1/2 tablespoons tapioca
- 1 stick cinnamon
- 3 lemon slices
- 3/4 cup sugar
- 1 pinch salt
Directions
- Combine buttermilk, whole milk, tapioca, cinnamon and lemon.
- Cook slowly 1 hour, stirring often to prevent scorching.
- Add sugar and salt.
- Serve hot or cold.

I am back to tell you that I made this, and it came out great! Tasted a lot like a sweet pudding, but not as thick. Great use for buttermilk! I added my picture, you can replace it with your own next time you make this again. Thanks for a great recipe!
