Zucchini Turkey Lasagna

- 2 zucchini shopping list
- 1 lb. ground turkey shopping list
- Chopped onion and garlicbasil, and dried oregano shopping list
- Several pinches of fennel seeds shopping list
- Jar pizza sauce shopping list
- ¼- ½ cup chicken broth shopping list
- 2 cups ricotta cheese shopping list
- 2 eggs shopping list
- Several dashes of nutmeg shopping list
- green onions shopping list
- Fresh mozzarella shopping list
How to make it
- Brown and season turkey, onions, and garlic.
- Drain fat and add pizza sauce and chicken broth.
- Bring to a boil and then simmer until it is not runny anymore
- Cut ends off zucchini and slice into 4 pieces long ways
- In a bowl, mix togtherer ricotta cheese, eggs, nutmeg, and green onions
- Now layer your lasagna – 4 strips of zucchini, ½ turkey and sauce mixture, as much of the cheese mixture as you would like (I only used about 2/3’s of it), then 4 more strips of zucchini, the rest of the sauce mixture, and top with sliced fresh mozzarella.
- Bake at 350F for an hour
- Let sit for 5-10 minutes
