How to make it

  • Brown and season turkey, onions, and garlic.
  • Drain fat and add pizza sauce and chicken broth.
  • Bring to a boil and then simmer until it is not runny anymore
  • Cut ends off zucchini and slice into 4 pieces long ways
  • In a bowl, mix togtherer ricotta cheese, eggs, nutmeg, and green onions
  • Now layer your lasagna – 4 strips of zucchini, ½ turkey and sauce mixture, as much of the cheese mixture as you would like (I only used about 2/3’s of it), then 4 more strips of zucchini, the rest of the sauce mixture, and top with sliced fresh mozzarella.
  • Bake at 350F for an hour
  • Let sit for 5-10 minutes
