Zucchini Turkey Lasagna Recipe
You'd never miss the noodles with this recipe. I thought I was eating Italian sausage lasagna!

Ingredients
  • 2 zucchini
  • 1 lb. ground turkey
  • Chopped onion and garlicbasil, and dried oregano
  • Several pinches of fennel seeds
  • Jar pizza sauce
  • ¼- ½ cup chicken broth
  • 2 cups ricotta cheese
  • 2 eggs
  • Several dashes of nutmeg
  • Green onions
  • Fresh mozzarella

Directions
  1. Brown and season turkey, onions, and garlic.
  2. Drain fat and add pizza sauce and chicken broth.
  3. Bring to a boil and then simmer until it is not runny anymore
  4. Cut ends off zucchini and slice into 4 pieces long ways
  5. In a bowl, mix togtherer ricotta cheese, eggs, nutmeg, and green onions
  6. Now layer your lasagna – 4 strips of zucchini, ½ turkey and sauce mixture, as much of the cheese mixture as you would like (I only used about 2/3’s of it), then 4 more strips of zucchini, the rest of the sauce mixture, and top with sliced fresh mozzarella.
  7. Bake at 350F for an hour
  8. Let sit for 5-10 minutes
