Roasted Sweet Potatoes and Peas with Special Indian Tomato Sauce

- roasted sweet potatoes and peas shopping list
- 1 can chickpeas shopping list
- 3/4 c frozen peas shopping list
- 1c chopped onions shopping list
- 3 tsp ground cumin shopping list
- 1/4 t ground cardamon shopping list
- 1 tsp ground coriander shopping list
- 2-3 T. canola or olive oil shopping list
- 2-3 large sweet potatoes, chopped shopping list
- 1 tsp ground cinnamon shopping list
- 1/4 tsp ground nutmeg shopping list
- Special Indian tomato sauce shopping list
- 2 large cans diced or crushed tomatoes ( no salt added ) shopping list
- 1/2 tsp salt ( if you want or not !) shopping list
- extra virgin olive oil shopping list
- 3 cloves garlic, minced shopping list
- 1/2 tsp fresh ginger, chopped ( love the ginger ) shopping list
- 1/4 c chopped onions shopping list
- 1 1/2 tsp ground coriander shopping list
- 1 1/2 tsp paprika shopping list
- 1 1/2 ground cumin shopping list
- 3 cinnamon sticks shopping list
- 3 bay leaves shopping list
How to make it
- Wash and chop potatoes into 1" even cubes
- Place in a baking pan with a little oil and salt, mix and bake at 425' for 30-40 min or until soft.
- Saute onions in oil until translucent. Add spices and mix a few minutes more. Add chickpeas and peas and heat until warm.
- Add sweet potatoes to chickpeas and mix gently.
- Serve over Brown Basmati rice.
- Top with Special Indian Tomato Sauce.
- For the Sauce: Saute onions and garlic in olive oil, add spices stir until coated.
- Add tomatoes, mix well and simmer on low heat until heated thru and flavors are melded. Top the Sweet Potatoes and enjoy!
