How to make it

  • Wash and chop potatoes into 1" even cubes
  • Place in a baking pan with a little oil and salt, mix and bake at 425' for 30-40 min or until soft.
  • Saute onions in oil until translucent. Add spices and mix a few minutes more. Add chickpeas and peas and heat until warm.
  • Add sweet potatoes to chickpeas and mix gently.
  • Serve over Brown Basmati rice.
  • Top with Special Indian Tomato Sauce.
  • For the Sauce: Saute onions and garlic in olive oil, add spices stir until coated.
  • Add tomatoes, mix well and simmer on low heat until heated thru and flavors are melded. Top the Sweet Potatoes and enjoy!
