Pear Pecan And Shrimp Salad

- 1 bag mixed salad greens shopping list
- 1 cucumber peeled, seeded, & diced shopping list
- 1 roma tomato diced shopping list
- 1/2 c shredded carrot shopping list
- 1/2 c red bell pepper diced shopping list
- 1/2 c red onion diced shopping list
- 1/2 c bleu cheese crumbles shopping list
- 1 pear diced shopping list
- 6 oz medium shrimp cooked and diced shopping list
- 1/2 c sugared pecans bits shopping list
- Your favorite raspberry vinegrette (I like Maple Valley Nonfat) shopping list
How to make it
- Make the sugar pecans by melting a teaspoon of butter in a small pan. Add the pecan pieces and heat until hot. Sprinkle with 1 T sugar and 1/8 teaspoon cinnamon. Remove pecans when the sugar melts. Cool.
- Diced all the vegetables and fruit about the same size.
- Toss the shrimp, vegetables, and fruit with the greens and the raspberry vinegrette.
- Top with the bleu cheese and sugared pecan bits.
- We like shrimp or chicken if we eat this as a main dish; otherwise, we leave the meat out if it is a side dish.

I like the addition of the shrimp - already love the whole bleu cheese/pear/greens/vinaigrette thing, so I know I will enjoy the shrimp on it, too.
