How to make it

  • Make the sugar pecans by melting a teaspoon of butter in a small pan. Add the pecan pieces and heat until hot. Sprinkle with 1 T sugar and 1/8 teaspoon cinnamon. Remove pecans when the sugar melts. Cool.
  • Diced all the vegetables and fruit about the same size.
  • Toss the shrimp, vegetables, and fruit with the greens and the raspberry vinegrette.
  • Top with the bleu cheese and sugared pecan bits.
  • We like shrimp or chicken if we eat this as a main dish; otherwise, we leave the meat out if it is a side dish.

    I like the addition of the shrimp - already love the whole bleu cheese/pear/greens/vinaigrette thing, so I know I will enjoy the shrimp on it, too.
