Cider Glazed Sweet Potatoes With Cranberries Recipe
CIDER GLAZED SWEET POTATOES WITH CRANBERRIES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hartford Estate in Mesquite Texas in 1991.

Ingredients
  • 2 large sweet potatoes peeled and cut into 1″ chunks
  • 1-1/2 cups apple cider
  • 1/4 cup packed golden brown sugar
  • 2 tablespoons butter
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1/2 cup dried cranberries

Directions
  1. Boil sweet potatoes in large pot of salted water until halfway cooked about 5 minutes.
  2. Drain and cool.
  3. Combine cider, sugar, butter, nutmeg and allspice in large skillet over medium high heat.
  4. Bring to a boil stirring often then add potatoes and reduce heat so liquid is simmering.
  5. Cook 5 minutes stirring occasionally then add cranberries and cook 10 minutes.
  6. When potatoes are tender transfer to serving bowl with slotted spoon.
  7. Season to taste with salt and pepper then pour remaining glaze over sweet potatoes and serve.
