Ingredients
  • 2 cups flour, sifted
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. baking soda
  • 1 tspl salt
  • 2 cups sugar
  • 1 1/4 cup vegetable oil
  • 4 eggs
  • 1 lb. carrots, peeled and grated
  • 1 cup pecans, chopped
  • 1 cup raisins

Directions
  1. Preheat oven to 350 degrees F.
  2. Sift flour, baking powder, cinnamon, baking soda, and salt together and set aside.
  3. Beat sugar into oil.
  4. Blend dry ingredients with oil and sugar.
  5. Add eggs one at a time, mixing well after each egg.
  6. Fold in carrots, pecans, and raisins.
  7. Pour into a lightly oiled 10-inch tube pan.
  8. Bake about 1 hour 10 minutes.

  10. Frosting
  11. 8 oz. cream cheese, softened
  12. 2 sticks of butter, softened
  13. 1 3/4 cup to 2 3/4 cup powdered sugar, sifted
  14. 1 tsp. vanilla
  15. Mix together well.
  16. Spread over cooled cake.

I made this cake a few days ago b/c of the abundance of carrots in the house... it was magnificent! I didn't put the frosting and I used walnuts instead and didn't get to eat too much (b/c of the sugar) BUT my younger sister who is always watching what she eats, scarfed it down... as well as my mother and father! My father actually requested that I make him another this week and to stick with this recipe!! Awesome! Thanks for the recipe! I'll post a photo next time I make it!
