Po'Boys have always been a favorite of southerners, but this little recipe gives it a "special touch" that might appeal to even the staunchest of "Yankees" . . . . .smilin'

Ingredients
  • 4 catfish filets, the size of your hand
  • Fish Fry
  • Egg batter (made with 1 beaten egg and about 3/4-cup milk with salt and pepper added to taste)
  • Peanut Oil
  • 4 Hoagie Rolls
  • Mayo
  • monterey Jack Cheese with Jalapanos (4-oz) shredded
  • Deli coleslaw - small
  • Louisiana Hot Sauce
  • Pepperocinis

Directions
  1. Heat peanut oil in deep fryer (or deep frying pan) to float fish.
  2. When you can drop a small drip of water in and it sizzles it's ready to fry the fish.
  3. Fry fish for barely three minutes per side.
  4. It will float when it is done.
  5. Do not overbrown.
  6. Put mayo on each roll.
  7. Top with fillet, shredded cheese, coleslaw, pepperocinis and hot sauce (just a shake or two).
  8. (Makes 4 hoagies)
