How to make it

  • Quarter the cherry tomatoes.
  • Throw them in a bowl with the basil (chiffonade if fresh).
  • Salt and pepper to taste.
  • Let the tomatoes sit for about 10 minutes.
  • Meanwhile, drizzle olive oil on the bread, then toast.
  • Cut the garlic clove in half, and rub the bread with it.
  • Spread the tomato mixture on the bread, making sure that the juice from the bottom of the bowl makes it onto the bread.
  • Top with a bit of grated parmesan.
  • Broil for about 3-5 minutes.
  • Devour.
