Rainbow Tomato Bruschetta

How to make it
- Quarter the cherry tomatoes.
- Throw them in a bowl with the basil (chiffonade if fresh).
- Salt and pepper to taste.
- Let the tomatoes sit for about 10 minutes.
- Meanwhile, drizzle olive oil on the bread, then toast.
- Cut the garlic clove in half, and rub the bread with it.
- Spread the tomato mixture on the bread, making sure that the juice from the bottom of the bowl makes it onto the bread.
- Top with a bit of grated parmesan.
- Broil for about 3-5 minutes.
- Devour.
