- 6slices of bacon...3/4cup chopped onion...1clove garlic,minced...1/4cup of all-purpose flour...11/2tsp chili powder...1tsp salt...11/2lbs.beef liver...1 16oz.can tomatoes,cut up...1 12oz.can whole kernell corn,drained. shopping list
How to make it
- in lrg skillet cook bacon till crisp..drain,reserving 3tbsp dripping in skillet..crumble bacon:set aside..cook onion & garlic in reserve drippings about 5min.or untill tender,but not brown..combine flour,chili powder,and salt..cut liver into thin strips:toss w/ flour mixture to coat...add liver to onion in skillet,brown quickly on both sides..stir in crumbled bacon,undrained tomatoes,and corn..simmer,covered,till mixture is heated through.(serve with tortillas or hot rice.ENJOY!
