Beefy Potatoes and Broccoli

This is an easy dish with the beef, onions and peppers flavoring the potatoes. It's a complete meal in one dish
Ingredients
- 1 lb. thin sliced beef shopping list
- 4 med. red potatoes, evenly sliced into circles shopping list
- 1 med. onion, evenly sliced into circles shopping list
- 1 bell pepper, sliced into strips shopping list
- 2 Tbl. oil shopping list
- 1/2 cup shredded chesse shopping list
- 1 cup fresh broccoli tops shopping list
- salt and pepper to taste shopping list
How to make it
- Saute beef in 1 Tbl. until no longer red, remove from pan
- Saute onions and peppers in 1 Tbl. oil until slightly tender
- Layer potatoes in a 2 qt. baking dish sprayed with non-stick spray
- Bake in a preheated oven for 20-25 minutes or until potatoes are done
- Evenly place meat on top of potatoes
- Evenly place potatoes and peppers over meat
- Place broccoli around edges of dish
- Sprinkle with cheese
- Place back into the oven and bake 15-20 minutes or until cheese is melted and broccoli is slightly tender.

Made this the other week, I used Monterrey jack cheese as I love how creamy it gets when baked!! The only thing I would change would be to add the cheese with each layer so that it gets in contact with all the ingredients!! Also, next time I want to ...more
