French Farmhouse Garlic Chicken

- 4 small skinless, boneless, chicken breast halves (about 12 oz. total) shopping list
- 1/4 tsp. salt shopping list
- 1/4 tsp. pepper shopping list
- 40 small garlic cloves, peeled or unpeeled (see note) shopping list
- 1 Tbs. olive oil shopping list
- 1/2 cup dry white wine shopping list
- 1/2 cup chicken broth shopping list
- 2 Tbs. white wine or chicken broth shopping list
- 1/2 Tbs. lemon juice shopping list
- 1/2 tsp. dried basil, crushed shopping list
- 1/2 tsp. dried oregano, crushed shopping list
- 1 tsp. herbes de provence (optional) shopping list
- 4 tsps. all-purpose flour shopping list
How to make it
- Season chicken with salt and pepper. In a 10-inch skillet cook chicken and garlic cloves in hot oil over medium-high heat for 4 to 6 minutes or just until browned, turning once. Slowly add the 1/2 cup white wine, the 1/2 cup broth, the lemon juice, basil, oregano, and herbes de Provence (if using). Bring to boiling, reduce heat. Cover and simmer for 6 to 8 minutes or until chicken is tender and no longer pink.
- Using a slotted spoon, transfer the chicken and garlic to a warm serving platter; keep warm.
- In a small bowl stir together the 2 Tbs. wine or broth and the flour. Stir into pan juices. Bring to boiling. Cook and stir for 1 minute more. (If sauce is too dry, add more wine or broth until it is the desired consistency). Spoon over chicken.
- Serve with French bread, mashed potatoes, or rice.
- Note: You can slip the skins off of the garlic as you eat the cooked cloves. Or if you prefer, peel the garlic cloves before cooking by using the flat side of a large knife to mash them slightly, then peel off the skins. It is also possible to buy a bag of already peeled garlic!

WOW. I love garlic & this recipe is sure interesting. I have to try it cause it sounds really good. A real easy way to skin the garlic is to drop them in hot water for a couple of minutes. The skins almost slide off. Hope that helps. 5 forks from me
