Dark Whipped Sweet Potatoes Recipe
My adaptation of one of the inaugural dishes, this is spicy, sweet and even a touch bitter from the molasses, but very nutritious. Makes 2 quarts, 16 servings of 1/2 cup each.

Ingredients
  • 3 lbs sweet potatoes
  • 1 tbsp unsalted butter
  • 1 teaspoon kosher salt
  • ΒΌ cup orange juice
  • 1 tablespoon blackstrap molasses
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 cup maple syrup

Directions
  1. Preheat the oven to 400 F.
  2. Place sweet potatoes on a baking sheet and roast 1 hour. Peel while still hot.
  3. Mash potatoes with butter until all large chunks are gone in a large bowl, then add salt, orange juice, molasses, ginger, cinnamon, and syrup.
  4. Mix together with a spatula until all lumps are gone.

Mmh molasses?? My grandmother had her own little recipe for sweet potatoes but I will have to try this and see how it taste. txs for posting !!
