  • • 1 pound white fish fillets (works well with salmon too)
  • • 1 teaspoon oil
  • • 1/2 cup fresh breadcrumbs
  • • 2 teaspoon parmesan cheese, Grated
  • • 1/4 teaspoon garlic powder
  • • 1/4 teaspoon lemon pepper

Directions
  1. Preheat oven to 425F.
  2. Rinse fish and pat dry. Lightly grease a small shallow baking pan with some of oil. Rub remaining oil over top of fish.
  3. In a small bowl, combine remaining ingredients and sprinkle over fish. Bake, uncovered, about 20 min. or until fish flakes easily.
  4. Per Serving: 182 Calories; 8g Fat (42.1% calories from fat); 23g Protein; 1g Saturated Fat; 3g Carbohydrate; trace Dietary Fiber; 69mg Cholesterol; 125mg Sodium. Exchanges: 0 Grain(Starch); 3 Lean Meat; 1/2 Fat.

I like it that it's baked, not fried. Sounds really good with the Parmesan and lemon-pepper!
