Gypsy Soup Recipe
This s a wonderful vegetable soup for any given occasion. Add some corn bread to this!

Ingredients
  • 1 c. chopped fresh tomato
  • 1 1/2 c. cooked garbanzo beans
  • 3/4 c. chopped green bell pepper
  • 1 small pinch ground cinnamon
  • cayenne pepper
  • 1 bay leaf
  • 3 c. chicken stock
  • 1 tbsp. tamari
  • 2 c. diced peeled sweet potatoes
  • 2 tsp. paprika
  • 1 tsp. ground turmeric
  • 1 tsp. dried basil
  • 1 tsp. salt
  • 4 tbsp. olive oil
  • 2 c. chopped onion
  • 1/2 c. chopped celery
  • 2 cloves garlic, crushed

Directions
  1. You will heat EVOO in a pot over medium heat.
  2. Next you will saute your onion, the garlic, celery, and the sweet potatoes for around 5 min.
  3. You will then add the paprika, turmeric, basil, salt, cinnamon, cayenne, and finally your bay leaf.
  4. Stir this and add while stirring your chicken stock and the tamari.
  5. You will then cover the pot and let it simmer for at least 15 min.
  6. Next, you will add the tomatoes, garbanzo beans, and your green pepper.
  7. Let this simmer for abround 10 min, letting the veggies get tender.
  8. Add salt and pepper and enjoy!

Mmm. switch the chicken broth to veggie and this look slike something I'd love! Thanks for sharing.


We had this tonight. Good with biscuits. Cook the chickpeas in quantity the day before and freeze what you don't use.


Chicken stock... vegetarian? please!
chickens are animals. chicken is NOT vegetarian. chicken stock is NOT vegetarian.

but must admit - without that stock it looks interesting.


Why is it called gypsy? just curious, looks good, save the chicken broth - switch to vegetable.


I would like to make this, it looks good, but could you please tell me what Tamari is, thanks
