How to make it

  • Preheat oven to 350*F. Lightly spray pan with vegetable pan spray.
  • Combine flour, granulated sugar, baking powder and salt in large bowl.
  • Beat egg with milk and vanilla. Stir in walnuts and cherries. Add all at once to flour mixture, stir just until moistened (batter will be rather stiff).
  • Place about 1 1/2 teaspoons batter in each cavity.
  • Bake 8-10 minutes. Cool 5 minutes in pan, remove to cooling rack. Makes 4 dozen muffins.

    These sounded great, but had somewhat disappointing results, as they turned out more like a cookie than a muffin. Not ready to give up on them yet, though, so will try tweaking the recipe and will post.
