Tuna? Curry? I thought it sounded weird, too, until I tried it on a friend's recommendation. Turned out surprisingly fantastic. And ridiculously easy to make (as long as you have a well-stocked spice rack) because the main ingredient comes from cans.

Ingredients
  • 4 6 oz. cans of chunk tuna, drained
  • 1 medium onion, diced
  • 2 small tomatoes, diced
  • 2 tablespoons curry spice mix powder
  • 1/2 tablespoon pure curry powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 2 teaspoons sugar
  • 1 tablespoon lemon juice
  • 1 can coconut milk
  • 1/2 cup chopped fresh cilantro
  • extra chili pepper sauce, if desired

Directions
  1. Heat about 2 tablespoons of oil in a wok or large skillet.
  2. Put the tuna in and stir fry for a minute.
  3. Add diced onion, curry spice mix, curry, paprika, and salt. Keep stir-frying until tuna is well-fried, approx 4 min.
  4. Add tomatoes, sugar, lemon juice, and coconut milk. Stir well. Cook until bubbly.
  5. Stir in chopped cilantro and chili pepper sauce right before serving. Serve on top of basmati rice.
