How to make it

  • Roughly cut potatoes into 1 inch pieces.
  • Put potatoes and eggs in a pot of water and boil until potatoes are tender and eggs are hard.
  • Drain potatoes well and place in a large bowl.
  • Peel and slice eggs.
  • Toss eggs and potatoes with the rest of the ingredients, adding salt and pepper to taste.
  • Using a potato masher, roughly mash ingredients to blend further.
  • Enjoy!

    yeah-i know what you mean...
    i think the german salad would have some grainy mustard as well and onion rather than scallion...
    for a stronger more pungent flavour...which i also love...especially if served with grilled meats...

    * i do admit to being ridiculously spoiled when it comes to food and being in NYC...
    thanks for reminding me what i have to be grateful for..

    Softie, this reminds me of one of the assortment of potato salads I'd see when still back in NY and shopping in a German deli. We don't have shops like those here in California and I sure miss them. The convenience and yummy foods. Mmmmm. This potato salad is perfect.
