I would serve this as a side at a summer BBQ or picnic...Or place a scoop on top of a green salad for a nice lunch. Elegant and easy.

Softie, this reminds me of one of the assortment of potato salads I'd see when still back in NY and shopping in a German deli. We don't have shops like those here in California and I sure miss them. The convenience and yummy foods. Mmmmm. This potato salad is perfect.

Yeah-i know what you mean...
i think the german salad would have some grainy mustard as well and onion rather than scallion...
for a stronger more pungent flavour...which i also love...especially if served with grilled meats...
* i do admit to being ridiculously spoiled when it comes to food and being in NYC...
