Potato Salad With Egg And Dill Recipe

Ingredients

red bliss potatoes- partially peeled

2 eggs

2 TBSP fresh dill - chopped

2 TBSP green onion - chopped

Kosher salt

freshly ground black pepper

2 TBSP extra virgin olive oil

4 TBSP red wine vinegar

Directions

Roughly cut potatoes into 1 inch pieces.

Put potatoes and eggs in a pot of water and boil until potatoes are tender and eggs are hard.

Drain potatoes well and place in a large bowl.

Peel and slice eggs.

Toss eggs and potatoes with the rest of the ingredients, adding salt and pepper to taste.

Using a potato masher, roughly mash ingredients to blend further.

Enjoy!

Softie, this reminds me of one of the assortment of potato salads I'd see when still back in NY and shopping in a German deli. We don't have shops like those here in California and I sure miss them. The convenience and yummy foods. Mmmmm. This potato salad is perfect.

Yeah-i know what you mean...
i think the german salad would have some grainy mustard as well and onion rather than scallion...
for a stronger more pungent flavour...which i also love...especially if served with grilled meats...

* i do admit to being ridiculously spoiled when it comes to food and being in NYC...
