Fried Goat Cheese with Mint Salad

- 12- ounces ( 350 g) goats cheese in a log and well chilled for slicing shopping list
- flour for coating shopping list
- 1- egg lightly beaten and seasoned with thyme and some freshly grated nutmeg......... shopping list
- garlic shopping list
- vegetable oil for frying shopping list
- 1- small onion finely chopped shopping list
- 1- tablespoon wine vinegar shopping list
- dash of Tabasco sauce shopping list
- 6 - heaping tablespoons of chopped fresh mint shopping list
How to make it
- slice the chilled cheese and dip the slices first in flour then in the beaten egg mixture, then back in the flour again
- heat the oil in a skillet until it begins to smoke then slide the cheese slices into the pan and cook them on both side until lightly golden brown...
- rub the inside of a bowl with the garlic and mix together the onion, olive oil, wine vinegar-tabasco sauce-and mint
- spoon the mixture onto the individual plates and place the cheese slices on top
- makes 4 servings

O.K. - For most people goat cheese is an acquired taste. I for one, love it. Occasionally that is. Anyway, this looks good to me. Thanks.
