How to make it

  • Cream butter and sugar together.
  • Beat in egg and flavoring until fluffy.
  • Sift together flour, baking powder and salt.
  • Stir dry ingredients and cereal into creamed mixture.
  • Chill thoroughly.
  • Roll level tablespoons into balls and place 2 inches apart on ungreased cookie sheets.
  • Flatten with bottom of moistened glass dipped in sugar.
  • Bake for 8 minutes in oven preheated to 375 degrees F.
  • Remove from cookie sheet and cool completely on racks before storing in an airtight container or zip-lock bags.

    Wow, this sounds good, healthy and definitely tasty- especially with the almond extract. Being diabetic, also love the very low sugar content. Thanks for a great post!
