Ingredients
  • 1 1/4 cup flour
  • 1 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1 egg
  • 1 1/2 teaspoon vanilla ( try 1 teaspoon almond extract)
  • 1/2 cup infant cereal ( Gerber or Natures Choice, barley, rice, oat, or mixed)

Directions
  1. Cream butter and sugar together.
  2. Beat in egg and flavoring until fluffy.
  3. Sift together flour, baking powder and salt.
  4. Stir dry ingredients and cereal into creamed mixture.
  5. Chill thoroughly.
  6. Roll level tablespoons into balls and place 2 inches apart on ungreased cookie sheets.
  7. Flatten with bottom of moistened glass dipped in sugar.
  8. Bake for 8 minutes in oven preheated to 375 degrees F.
  9. Remove from cookie sheet and cool completely on racks before storing in an airtight container or zip-lock bags.

Wow, this sounds good, healthy and definitely tasty- especially with the almond extract. Being diabetic, also love the very low sugar content. Thanks for a great post!
