How to make it

  • Remove all meat from chicken and shred or cut into bite-size pieces.
  • Combine water, cream cheese, half and half, and green chiles in a large saucepan. Cook over low heat, stirring continuously until mixture is smooth and creamy. Take care that liquid does not scald or burn.
  • Stir in chicken and simmer, stirring often, until flavors are combined and chicken is warmed through, 15 to 20 minutes. Season with salt and pepper to taste.
