Chicken Green Chili Cream Soup Recipe
This recipe is so easy but soooo good. I buy the cooked rotisserie chicken at CostCo just cause I think they are better and fresher. Serve this with a salad and cornbread.

Ingredients
  • 1 whole cooked rotisserie chicken from supermarket
  • 3 cups water
  • 1 8 oz package cream cheese
  • 1 pint half and half
  • 1 14 oz package frozen chopped green chiles, thawed.
  • salt and pepper

Directions
  1. Remove all meat from chicken and shred or cut into bite-size pieces.
  2. Combine water, cream cheese, half and half, and green chiles in a large saucepan. Cook over low heat, stirring continuously until mixture is smooth and creamy. Take care that liquid does not scald or burn.
  3. Stir in chicken and simmer, stirring often, until flavors are combined and chicken is warmed through, 15 to 20 minutes. Season with salt and pepper to taste.

Sure does sound delicious! I love that it's easy. We need some easy ones on days when we are busy and need to cook supper in a hurry.
