Cherry Covered Pork Roast Recipe
CHERRY COVERED PORK ROAST This recipe came from an estate sale. I obtained it when I purchased the family collection from the Paulson Estate in Allen, Texas in 1982.

Ingredients
  • 1 cup cherry preserves
  • 2 tablespoons light corn syrup
  • 1/4 cup red wine vinegar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 3 tablespoons slivered almonds
  • 3 pounds pork roast boned

Directions
  1. Combine preserves, syrup, vinegar and cinnamon.
  2. Simmer stirring frequently several minutes then reduce heat and add almonds.
  3. Keep warm.
  4. Rub meat with salt and pepper then bake at 325 for 2-1/2 hours.
  5. Baste with sauce during last half hour of cooking then serve with remaining sauce.
