Tex Mex Pork Loaf Recipe

	main mexican meatloaf pork onion olives tomatoes chilies

Ingredients

1-1/2 pounds ground pork

1 cup bread crumbs

1 medium white onion

3 ounces black olives

15 ounce can tomatoes

4 ounce can green chilies

1 egg lightly beaten

2 cloves garlic

1 teaspoon salt

2 teaspoons freshly ground black pepper

4 ounces sharp cheddar cheese

Directions

Chop onion and add to pork.

Add all other ingredients except cheese and form into a loaf and bake 55 minutes at 350.

Grate cheese and place on top and return to oven for a few minutes to melt cheese.
