Cheesy Potato Casserole

- 2 pounds of potatoes (about 7), sliced 1/4" thick shopping list
- 2 cups shredded cheddar cheese shopping list
- 1 can cream of chicken soup shopping list
- 1 cup sour cream shopping list
- 1/4 cup butter, melted shopping list
- salt and pepper shopping list
- 1 small onion, diced shopping list
- 1 1/2 - 2 cups stuffing mix shopping list
- 3 Tbsp. melted butter shopping list
How to make it
- Coat crockpot with butter. Add sliced potatoes. Mix cheddar cheese with potatoes. In a separate bowl, combine soup, sour cream, onion and 1/4 cup melted butter. Add salt and pepper to taste. Add mixture to potatoes and mix thoroughly. Sprinkle stuffing mix over potatoes and add melted butter. Cook 8 hours on low or until potatoes are tender.
