Beer Brined Grilled Pork Chops Recipe
BEER BRINED GRILLED PORK CHOPS This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Hamilton Estate in Arlington, Texas in 1988.

Ingredients
  • 2 cups water
  • 2 cups dark lager beer
  • 1/4 cup coarse salt
  • 3 tablespoons packed dark brown sugar
  • 3 tablespoons light molasses
  • 1 cup ice cubes
  • 6 center cut bone in pork chops
  • 7 large garlic cloves minced
  • 3 teaspoons coarsely ground black pepper
  • 2 teaspoons salt
  • 2 teaspoons dried sage leaves

Directions
  1. Combine water, beer, salt, sugar and molasses in large bowl.
  2. Stir until salt and sugar dissolve then stir in ice.
  3. Place pork chops in large plastic bag then pour beer brine over chops and seal bag.
  4. Refrigerate 4 hours turning bag occasionally.
  5. Prepare barbecue to medium high heat then remove chops from brine and pat dry.
  6. Mix garlic, pepper, salt and sage in small bowl then rub mixture over both sides of chops.
  7. Grill pork chops 10 minutes per side then cover chops to platter and cover with foil.
  8. Allow stand 5 minutes and serve.
