Penne Salad With Three Herbs Capers And Tuna

- 6 ounce can olive oil packed tuna drained shopping list
- 1-1/2 teaspoons salt shopping list
- 1/2 pound penne pasta shopping list
- 2 tablespoons fresh lemon juice shopping list
- 2 tablespoons extra virgin olive oil shopping list
- 1/2 teaspoon freshly ground pepper shopping list
- 1/4 cup chopped fresh flat leaf parsley shopping list
- 1/4 cup chopped fresh basil shopping list
- 1/4 cup chopped fresh cilantro shopping list
- 2 teaspoons capers rinsed and drained shopping list
How to make it
- Place tuna in small bowl then break into flakes using fork and set aside.
- Heat large pot filled with water to boil.
- Add penne and 1 teaspoon salt then cook until al dente about 12 minutes.
- Drain and transfer to large serving bowl.
- Add lemon juice, olive oil, remaining salt and pepper then toss to coat.
- Add tuna, parsley, basil, cilantro and capers then mix gently.
- Taste and adjust seasoning then cover and refrigerate to chill about 1 hour.
- Serve at room temperature.
