My son and I love the Chicken Pomodori Panini sandwich from Corner Bakery, but it's quite pricey. I had some leftover chicken breast from dinner the night before so I decided to give this a go, it came out almost exact, in fact I liked it better!! :... More

Ingredients
- 1 Chicken Breast
- tbsp fresh Basil, chopped
- approximately 5 or 6 leaves of fresh Baby Spinach
- 2 small Roma Tomatoes
- 1/2 slice Provolone Cheese
- 1/2 slice Smoked Gouda
- quarter of Red Onion, chopped
- tbsp or two of Mayo
- tsp Sour Cream
- tsp Pesto
- 1 clove Garlic, mashed
- 2 slices of San Francisco Style Sourdough Bread
- Salt and Pepper to taste
Directions
- I used a chicken breast from dinner the night before, it was pan fried with seasonings in a small amount of olive oil
- Cut chicken breast in half, set aside
- Slice Tomatoes, place on cookie sheet and oven roast them at 350 for about 10 minutes, sprinkle with salt and pepper
- In a small bowl, mix red onion, mayo, sour cream, pesto, garlic
- Butter one side of each slice of bread, place bread on grill (I used my George Foreman Grill) until very lightly browned
- Spread Onion/Mayo mixture on bread
- Put both cheese on bread
- Layer and enjoy!! :)
