Ingredients

How to make it

  • I used a chicken breast from dinner the night before, it was pan fried with seasonings in a small amount of olive oil
  • Cut chicken breast in half, set aside
  • Slice Tomatoes, place on cookie sheet and oven roast them at 350 for about 10 minutes, sprinkle with salt and pepper
  • In a small bowl, mix red onion, mayo, sour cream, pesto, garlic
  • Butter one side of each slice of bread, place bread on grill (I used my George Foreman Grill) until very lightly browned
  • Spread Onion/Mayo mixture on bread
  • Put both cheese on bread
  • Layer and enjoy!! :)

    Take 2 slices of sourdough bread. (Butter one side of both slices) garlic herb butter (butter other side of each slice) 2 slices provolonge cheese on both slices of bread, (garlic side)grilled chicken, jullianne or bias cut, roasted tomatoes, fresh Basil leaves (do not overpower) add spinach, top with remaining slice. Grill to perfection

    I just made this tonight and what a great way to end the long, hard work week. The onion/mayo/pesto mixture was perfect. I felt like I had just order from Corner Bakery. Best of all, I fed my family of five for less than the price of one meal from Corner Bakery! Thanks for posting the recipie:)

    chicken panini's are the best! i do miss corner bakery, although we have similar restaurants here in georgia, they are not quite the same. this looks and sounds fantastic, great post!
