Chicken Pomodori Panini

- 1 chicken breast shopping list
- tbsp fresh basil, chopped shopping list
- approximately 5 or 6 leaves of fresh baby spinach shopping list
- 2 small roma tomatoes shopping list
- 1/2 slice provolone cheese shopping list
- 1/2 slice Smoked Gouda shopping list
- quarter of red onion, chopped shopping list
- tbsp or two of Mayo shopping list
- tsp sour cream shopping list
- tsp Pesto shopping list
- 1 clove Garlic, mashed shopping list
- 2 slices of San Francisco Style sourdough bread shopping list
- salt and pepper to taste shopping list
How to make it
- I used a chicken breast from dinner the night before, it was pan fried with seasonings in a small amount of olive oil
- Cut chicken breast in half, set aside
- Slice Tomatoes, place on cookie sheet and oven roast them at 350 for about 10 minutes, sprinkle with salt and pepper
- In a small bowl, mix red onion, mayo, sour cream, pesto, garlic
- Butter one side of each slice of bread, place bread on grill (I used my George Foreman Grill) until very lightly browned
- Spread Onion/Mayo mixture on bread
- Put both cheese on bread
- Layer and enjoy!! :)
