Ingredients

4 Potatoes,whole

3 Cloves of Garlic,crushed

1/4 teaspoons Salt

1/2 Cup Oil

1/2 Cup Olive Oil

1/2 Cup Vinegar

Cooked Beets (or) Fresh Vegetables(steamed very so lightly,then into a ice bath,drain on towel)

Directions

Cook the potatoes until tender,then peel off skin.

Mash the potatoes and garlic together with the salt until smooth.

Whip in the oil and vinegar,alternately,by small amounts.

Chill.

~Serve with the cooked beets(or) as a dip for the vegetables~

What is the country of origin of this recipe? It seems to have flares of Slavic (potatoes, garlic, beets.) Also, do you have a recommendation for the other oil in this recipe (aside from olive oil that is listed?) Seems as though one could use all of oil solely... yes?
