How to make it

  • Put chocolate chips in mixing bowl
  • Bring half-and-half to almost a boil
  • Pour over chocolate
  • Whisk until smooth
  • Add Chambord and whisk until combined
  • Put raspberries on bottom of 4 oven proof soup cups
  • Pour chocolate soup over raspberries
  • Keep warm
  • Scrape contents of the vanilla bean into the egg whites and beat until fluffy
  • Slowly add sugar while beating egg whites on high
  • Lower speed to medium and whip until soft peak stage
  • Put meringue in pastry bag with decorating tip and top soup
  • Place under broiler to toast meringue or use a blow torch

    I didn't have any Chambord, so I substituted rum. Didn't have any half and half, so I substituted rum. Woke up about 5 minutes ago, empty torch in hand, no eyebrows, chocolate chips all over the stairs - and the cat is looking rather amused....'-)

    Sounds like a great recipe - I've saved it, and will try soon !
