HONEY BARBEQUE CHICKEN STRIPS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Greene Estate in Mesquite, Texas in 1991.

Ingredients
  • 2 pounds boneless skinless chicken strips
  • 2-3/4 cups flour
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 cup buttermilk
  • Vegetable oil for deep frying
  • Sauce:
  • 1 cup hickory smoke barbeque sauce
  • 1/4 cup water
  • 2 tablespoons honey
  • 1 tablespoon catsup
  • 1 teaspoon liquid smoke

Directions
  1. Mix flour, salt and pepper in bowl then set aside.
  2. Place buttermilk in separate bowl.
  3. Heat oil for frying and dip chicken strips in flour then in buttermilk and then finally flour again.
  4. Place in oil that has heated to 375.
  5. Fry strips without overcrowding until lightly golden brown then remove and drain well.
  6. Place all ingredients in small sauce pan then mix thoroughly and simmer 20 minutes.
  7. Allow sauce to cool slightly then dip one chicken breast strip in sauce at a time.
  8. Place in a baking pan that has been sprayed lightly with nonstick spray.
  9. Place in preheated 350 oven and bake 20 minutes then serve immediately.
