Stuffed Potato Jackets

- 4 large baking potatoes shopping list
- 1 white onion finely chopped shopping list
- 4 ounces sliced mushrooms shopping list
- 1 small can sweet corn drained shopping list
- 1 red pepper finely diced shopping list
- 1 garlic clove crushed shopping list
- 2 ounces butter shopping list
- 4 ounces cheese grated shopping list
- 1 tablespoon fresh tarragon chopped shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
How to make it
- Scrub and prick potatoes then bake at 450 for 1-1/2 hours.
- Remove from oven and leave it to cool slightly.
- Halve the potatoes and scoop out insides and mash until soft and fluffy.
- Sauté onion, mushrooms, sweet corn, red pepper and garlic in butter for a few minutes.
- Place potato skins on a baking sheet.
- Mix together the mashed potato, vegetable mixture, half the cheese and all the chopped tarragon.
- Season with salt and pepper the pile mixture back into skins and sprinkle with remaining cheese.
- Return potatoes to oven and turn down heat to 375 then cook 20 minutes longer and serve.
