How to make it

  • Scrub and prick potatoes then bake at 450 for 1-1/2 hours.
  • Remove from oven and leave it to cool slightly.
  • Halve the potatoes and scoop out insides and mash until soft and fluffy.
  • Sauté onion, mushrooms, sweet corn, red pepper and garlic in butter for a few minutes.
  • Place potato skins on a baking sheet.
  • Mix together the mashed potato, vegetable mixture, half the cheese and all the chopped tarragon.
  • Season with salt and pepper the pile mixture back into skins and sprinkle with remaining cheese.
  • Return potatoes to oven and turn down heat to 375 then cook 20 minutes longer and serve.
