How to make it

  • In food processor, chop scallions, cilantro, parsley, garlic, and ginger with vinegar and 1 T oil until pesto consistency
  • In skillet, heat 1 T oil over medium-high. Season chicken with cayenne, salt, and pepper. Cook, turning once, until opaque throughout, 4-5 minutes. Let rest 5 min, and thinly slice.
  • Cook soba according to package instructions. Drain, toss with herb mixture.
  • Serve chicken with soba, garnish with cilantro if desired.
