Sauteed Chicken With Herbed Soba Recipe

Ingredients
  • 4 green onions, sliced
  • 1 cup packed fresh cilantro leaves
  • 1 cup fresh parsley
  • 1 clove garlic, chopped
  • 1 teaspoon minced fresh ginger
  • 1/4 cup rice vinegar
  • 2 tablespoons vegetable oil
  • 12 oz chicken cutlets
  • cayenne pepper
  • coarse salt and ground pepper
  • 1 package soba

Directions
  1. In food processor, chop scallions, cilantro, parsley, garlic, and ginger with vinegar and 1 T oil until pesto consistency
  2. In skillet, heat 1 T oil over medium-high. Season chicken with cayenne, salt, and pepper. Cook, turning once, until opaque throughout, 4-5 minutes. Let rest 5 min, and thinly slice.
  3. Cook soba according to package instructions. Drain, toss with herb mixture.
  4. Serve chicken with soba, garnish with cilantro if desired.
