Total Pineapple Cheesecake Recipe
Yep, another cheesecake, but not your ordinary cheesecake, the pineapple adds an incredible taste to this delight. Enjoy

Ingredients
  • 18 graham crackers crushed
  • 1/2 cup granulated sugar
  • 1/4 cup melted margarine
  • 1 cup pineapple juice
  • 1 package lemon gelatin
  • 6 ounces cream cheese softened
  • 2/3 cup granulated sugar
  • 1 teaspoon vanilla flavoring
  • 1-2/3 cup evaporated milk chilled
  • 1 small can crushed pineapple drained

Directions
  1. Combine graham cracker crumbs with 1/2 cup sugar and melted margarine.
  2. Press in bottom of 9” pie pan then bake at 375 for 8 minutes and cool.
  3. Bring pineapple juice to a boil then add gelatin and cool.
  4. Blend cream cheese with sugar and vanilla then combine with gelatin mixture.
  5. Whip evaporated milk until thick then add gelatin mixture.
  6. Pat pineapple over graham cracker crust and pour in filling.
  7. Sprinkle a few graham cracker crumbs over top then chill 3 hours.
