Baked Stuffed Haddock Recipe

Ingredients
  • 15 haddock filets
  • 1 pound lump crabmeat
  • 1/2 cup chopped celery
  • 1/2 cup chopped white onion
  • 2-1/2 tablespoons chopped parsley
  • 1 tablespoon Old Bay seasoning
  • 2 cups regular bread crumbs
  • 2 whole eggs
  • 1/2 cup mayonnaise
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 2 tablespoons chopped shallots
  • 1 pinch flour
  • 1/2 cup dry white wine
  • 1/2 pound soft butter

Directions
  1. Mix crabmeat, celery, onion, parsley, old bay, bread crumbs, eggs, mayonnaise, Worcestershire and mustard together.
  2. Portion into 2 ounces and roll up in the haddock filets.
  3. Place in buttered casserole dish.
  4. Drizzle with white wine.
  5. Bake at 400 for 15 minutes.
  6. Sauté the shallots then add the flour and win and reduce by half.
  7. Gradually add butter whisking constantly.
  8. Strain and pour over haddock after it is baked.
