After Work Pie

- 1lb. ground turkey shopping list
- 1lb. ground beef shopping list
- 1lb . Crimini mushrooms, cleaned and thickly sliced shopping list
- 4 cups of leftover mashed potatoes( garlic and scallion) shopping list
- 1/2 cup sour cream shopping list
- 1/2 cup of parmesan cheese finely grated shopping list
- 1 egg white slightly beaten shopping list
- 1 yellow onion medium diced shopping list
- 6 cloves of garlic sliced shopping list
- 1 carrot medium diced shopping list
- 1 handful green beans steamed shopping list
- 1/2 crown of broccoli, steamed slighly shopping list
- 1 cup frozen peas, heated shopping list
- 1tsp paprika shopping list
- 1 tsp curry powder shopping list
- 1 tsp black pepper shopping list
- 1 generous pinch of kosher salt shopping list
- 1 pinch of cayenne pepper shopping list
- 1 tsp Mrs. Dash's Table Blend seasoning shopping list
- 1 1/2 tsp of dry thyme(adjust if you use fresh herbs) shopping list
- 1tbsp of dried chives(use fresh if you can) shopping list
- 1 pkg of mushroom gravy mix shopping list
- 1 pkg of pork gravy mix shopping list
- 1/2 box low sodium vegetable broth shopping list
- 3/4 red wine shopping list
- 1 tbsp tomato paste shopping list
- 1 1/2 cups water, cold shopping list
How to make it
- Preheat oven to 375 degrees
- In a large non stick skillet, brown the beef and turkey together. Once
- browned, drain the cooked meats in a strainer to remove excess fats,
- if any. While meat is set to drain, add onions and carrots to the pan.
- Saute on med high heat for 3 minutes,then add the mushrooms continue to simmer for 3 minutes. Return meats to pan and add
- the garlic, paprika, curry, Dash's, cayenne and black pepper, kosher salt. Saute mixture in pan at med heat for 5 minutes or until onions are
- translucent. Add the red wine, turn heat up to high until mixture is simmering let the mixture do so for 4 minutes then add the vegetable
- broth and bring to boil. Then reduce heat to simmer for five minutes.
- Add tomato paste, chives ,thyme ,green beans, broccoli, and heat through. Add peas . In a cup, mix the two packs of gravy mix and 1 1/2
- cups water through mixing to combine. Add this slurry to the pan and
- combine. Bring the heat back up and simmer until sauce has thickened.
- Once thickened, turn off heat let rest for 5 minutes. After five minutes
- add sour cream to pan and mix to combine.
- Warm leftover mashed potatoes in microwave. They should not be
- too hot. Add the parmesan cheese and egg white to them and throughly
- combine. Time to assemble the pie!
- Transfer meat filling to a casserole dish. Carefully plop mashed potato
- mixture over top. Very carefully spread potatoes to cover meat filling.
- Bake casserole on lined baking sheet in oven for 40-50 minutes or
- until topping is golden brown. Remove from oven and let set for 10
- minutes before serving.
