After Work Pie Recipe
A quickly assembled cottage/sherperd's pie with a few twists and a casserole slant.

Ingredients
  • 1lb. Ground Turkey
  • 1lb. Ground Beef
  • 1lb . Crimini Mushrooms, cleaned and thickly sliced
  • 4 cups of leftover mashed potatoes( garlic and scallion)
  • 1/2 cup sour cream
  • 1/2 cup of parmesan cheese finely grated
  • 1 egg white slightly beaten
  • 1 yellow onion medium diced
  • 6 cloves of garlic sliced
  • 1 carrot medium diced
  • 1 handful green beans steamed
  • 1/2 crown of broccoli, steamed slighly
  • 1 cup frozen peas, heated
  • 1tsp paprika
  • 1 tsp curry powder
  • 1 tsp black pepper
  • 1 generous pinch of kosher salt
  • 1 pinch of cayenne pepper
  • 1 tsp Mrs. Dash's Table Blend Seasoning
  • 1 1/2 tsp of dry thyme(adjust if you use fresh herbs)
  • 1tbsp of dried chives(use fresh if you can)
  • 1 pkg of mushroom gravy mix
  • 1 pkg of pork gravy mix
  • 1/2 box low sodium vegetable broth
  • 3/4 red wine
  • 1 tbsp tomato paste
  • 1 1/2 cups water, cold

Directions
  1. Preheat oven to 375 degrees
  2. In a large non stick skillet, brown the beef and turkey together. Once
  3. browned, drain the cooked meats in a strainer to remove excess fats,
  4. if any. While meat is set to drain, add onions and carrots to the pan.
  5. Saute on med high heat for 3 minutes,then add the mushrooms continue to simmer for 3 minutes. Return meats to pan and add
  6. the garlic, paprika, curry, Dash's, cayenne and black pepper, kosher salt. Saute mixture in pan at med heat for 5 minutes or until onions are
  7. translucent. Add the red wine, turn heat up to high until mixture is simmering let the mixture do so for 4 minutes then add the vegetable
  8. broth and bring to boil. Then reduce heat to simmer for five minutes.
  9. Add tomato paste, chives ,thyme ,green beans, broccoli, and heat through. Add peas . In a cup, mix the two packs of gravy mix and 1 1/2
  10. cups water through mixing to combine. Add this slurry to the pan and
  11. combine. Bring the heat back up and simmer until sauce has thickened.
  12. Once thickened, turn off heat let rest for 5 minutes. After five minutes
  13. add sour cream to pan and mix to combine.
  14. Warm leftover mashed potatoes in microwave. They should not be
  15. too hot. Add the parmesan cheese and egg white to them and throughly
  16. combine. Time to assemble the pie!
  17. Transfer meat filling to a casserole dish. Carefully plop mashed potato
  18. mixture over top. Very carefully spread potatoes to cover meat filling.
  19. Bake casserole on lined baking sheet in oven for 40-50 minutes or
  20. until topping is golden brown. Remove from oven and let set for 10
  21. minutes before serving.
