Asparagus with Thyme Couscous Stir Fry

- various vegetables (leftover corn on the cob works well) shopping list

How to make it
- Begin cooking couscous however you like (I just followed the directions on the package)
- Wash asparagus, trim off the ends, and arrange in an oven-proof pan.
- Drizzle with olive oil and sprinkle on some sea salt and thyme.
- Roast for 40 minutes at 375F
- Mix couscous and some oilve oil in a stir fry pan.
- Stir in various vegetables, we used left-over corn and the roasted asparagus, chopped up.
- Add a little bit more thyme.
