How to make it

  • Begin cooking couscous however you like (I just followed the directions on the package)
  • Wash asparagus, trim off the ends, and arrange in an oven-proof pan.
  • Drizzle with olive oil and sprinkle on some sea salt and thyme.
  • Roast for 40 minutes at 375F
  • Mix couscous and some oilve oil in a stir fry pan.
  • Stir in various vegetables, we used left-over corn and the roasted asparagus, chopped up.
  • Add a little bit more thyme.

    That sounds very good - now all I need is for out farmers markets to open for the season again! I will try this with the corn when it is in season...the flavor with the asparagus sounds perfect. Thanks!
