Mince Beef Wellington

- 1 onion chopped (try and chop all veg to the same size) shopping list
- 1 carrot chopped shopping list
- 1 potato chopped shopping list
- 1 stick celery chopped shopping list
- 2 large flat mushrooms chopped shopping list
- 2 cloves garlic, minced shopping list
- 4 sprigs rosemary, leaves stripped and finely chopped shopping list
- olive oil for frying shopping list
- ............................... shopping list
- big handful frozen peas shopping list
- 1 large egg, beaten shopping list
- 500g good quality mince beef (ground beef) shopping list
- sea salt and fresh ground black pepper shopping list
- flour for dusting shopping list
- 500g puff pastry shopping list
How to make it
- Gently fry the veg in the olive oil till lightly coloured and just soft
- add the peas and cook for a further minute
- put veg mix into a bowl and allow to cool completely
- preheat the oven to 180C / 350F / GAS 4
- once cool add the mince and half the egg, mix well with your hands
- roll out the pastry till it's the same size as a small tea towel
- with the long side facing you form the mince into a long sausage shape along the edge
- baste the pastry well with egg
- roll up the pastry sealing the ends well
- baste with the rest of the egg
- lightly score the pastry along the top
- lightly flour a baking sheet and place the wellington on it
- bake for 1 hour till golden brown
- slice and serve with steamed veg and gravy
