Ingredients
  • 1 leg of lamb about 2 kg
  • 2 med onions, peeled
  • 2 carrots
  • 2 sticks celery
  • 1 bulb garlic
  • olive oil
  • sea salt and fresh ground pepper
  • small bunch thyme
  • 4 sprigs rosemary, chopped into 1" pieces
  • small handful sage
  • roughly tear herbs with your hands

Directions
  1. preheat oven to 240C / 474F / gas 9
  2. wash and roughly chop veg
  3. break garlic bulb into cloves leave skins on
  4. pile veg and herbs into the roasting dish and drizzle with olive oil
  5. drizzle lamb with olive oil and season with salt and pepper
  6. rub well into the meat
  7. place lamb on top of the veg
  8. pop into the oven and immediately turn oven down to 200C / 400F / gas 6
  9. if youre doing roast potatoes and veg you want to get them into the oven for the last hour of cooking
  10. baste lamb half way through cooking and if veg look dry add a splash of water to stop them burning
  11. when lamb is ready remove from oven, transfer to a board cover with foil and a tea towel and let rest while you make your gravy
  12. carve and serve
