Perfect Roast Lamb

- 1 leg of lamb about 2 kg shopping list
- 2 med onions, peeled shopping list
- 2 carrots shopping list
- 2 sticks celery shopping list
- 1 bulb garlic shopping list
- olive oil shopping list
- sea salt and fresh ground pepper shopping list
- small bunch thyme shopping list
- 4 sprigs rosemary, chopped into 1" pieces shopping list
- small handful sage shopping list
- roughly tear herbs with your hands shopping list
How to make it
- preheat oven to 240C / 474F / gas 9
- wash and roughly chop veg
- break garlic bulb into cloves leave skins on
- pile veg and herbs into the roasting dish and drizzle with olive oil
- drizzle lamb with olive oil and season with salt and pepper
- rub well into the meat
- place lamb on top of the veg
- pop into the oven and immediately turn oven down to 200C / 400F / gas 6
- if youre doing roast potatoes and veg you want to get them into the oven for the last hour of cooking
- baste lamb half way through cooking and if veg look dry add a splash of water to stop them burning
- when lamb is ready remove from oven, transfer to a board cover with foil and a tea towel and let rest while you make your gravy
- carve and serve
