    I love this recipe and only use it for all my pork and chicken that I smoke. I first found it in 2011, and was using it consistently so I used it for a small BBQ rib contest in Memphis, TN. Well, I think the judges loved it also because I took first place in that contest! Over the years I have dialed down the Cumin a little bit since that flavor can be a little pungent.

    I didn't really like this. Cumin is an odd taste to put with pork. This mix is nowhere near as yummy as a sage, onion and apple based mix. I felt pretty sad that my lovely pork chop was covered in this stuff.

    Hey Carol,
    I'm glad you liked it. You'll love the flavor on chicken or pork chops. I've never tried it with beef, although you could try it. I was watching the Food Channel the other night on BBQ's and this one is similar to a lot of the ones they use in some of the Texas BBQ places there. I've never been to Texas but would love to go there and sample some of the "grub".

    This recipe is definately "hot" not in temperature but just awesome! Once you try it on chicken or pork you'll be a convert. You can couble the recipe which is what I usually do.
