Moms Wetback Delight Recipe

Ingredients

"Meat Mixture"

2 1/2 lbs Hambuger

2 1/2 cups Cooked Rice

2 Diced Onions

To Taste Garlic

2 1/2 tsp Salt

3 6oz cans Tomato Paste

2 8oz cans Tomato sauce or puree

4 Tbsp Sugar

2 1/2 tsp Oregano

2 1/2 tsp Cumin

"Add Ons"

Frito Chips

Sour Cream

Salsa

Lettuce Shredded

Cheese Shredded

Tomato Diced

Onion Diced

Avocado Diced

Olives Sliced

Directions

Cook rice set aside, brown meat-pour off fat, add onion and garlic, simmer until onion is soft, but not brown, add rice and the rest of the "Meat Mixture" ingredients, stir well after adding each.

Simmer for at least 4 hours, tasting as it cooks add more water or seasoning if needed.

Best if cooked one day, warmed up and servered the next.

This is the basic "Meat Mixture" recipe. You can add any number of things to it, such as: Diced Ortega Green Chiles, Chile pepper flakes, Tabasco, or Jalapeño Peppers.

Place Frito Chips on plate, add meat mixture, then top with any or all of the "Add Ons".

CAUTION: Start with small amounts the stack will get bigger than you think.
