Silky Cauliflower and Basil Soup

- 1 cauliflower shopping list
- 3 14 oz cans chicken broth shopping list
- 1 c. condensed milk shopping list
- 2 T. butter shopping list
- 1 T. curry powder shopping list
- 2 t. crushed ginger shopping list
- 1 t. onion powder shopping list
- 1 T. crushed garlic shopping list
- ½ c. fresh basil, chopped shopping list
- 4 T. cream sherry shopping list
- 1 t. salt (or to taste) shopping list
- ½ c. low fat or non fat sour cream shopping list
- Fresh chives shopping list
How to make it
- 1) Trim cauliflower. Steam until soft in a large pot with cover. Drain
- 2) Carefully separate. Add pieces back to pot.
- 3) Add chicken broth milk, basil and spices.
- 4) Bring to a boil and simmer for about 10-15 minutes, until the cauliflower begins to disintegrate.
- 5) Add milk and, butter, and sherry. Heat on medium about 5 minutes.
- 6) Add sour cream and stir thoroughly.
- 7) Blend in a blender in batches or with a hand blender.
- 8) Top with fresh snipped chives.
- Can be served hot or cold.
